Carob, a name of Arab origin, is native to the Mediterranean region, especially in the east and south of Spain. It is the fruit of the carob tree, which is an evergreen tree that can reach up to eighteen metres in height.

* The fruit of the dried carob tree is traditionally eaten during the Jewish festivals and the juice is taken by the Muslims, during the month of Ramadan.

* It is used as a substitute in the manufacture of various products such as baked goods, bars, snacks, cereals, dairy products, products and beverages containing cocoa.
